Polish Marble Bunt Cake {Babka Marmurkowa}
Easter is right around the corner. It’s time to start prepping for this very important celebration. I’m starting with babka, a soft and crumbly cake, baked in a bunt cake pan, sprinkled with powdered sugar or glazed with chocolate frosting. I’m opting for vanilla-chocolate swirl (marble) this time.
Polish Marble Bunt Cake {Babka Marmurkowa}
Ingredients
- 14 tbsp / 200 g of soft butter
- 1 c / 200 g of sugar
- 1 tsp of vanilla extract
- 2 c / 250 g of flour
- 4 eggs separated
- 1/4 c / 60 ml of milk
- 1 tbsp of baking powder
- 1/4 c of cocoa
- 2 tbsp of run, whiskey or cognac
- Pinch of salt
- Powdered sugar
Instructions
Preheat oven to 375°F / 190°C.
Beat soft butter and sugar until fluffy (3–4 minutes), add vanilla extract, mix until combined.
In a separate bowl combine flour, baking powder and a pinch of salt.
Alternately add egg yolks, flour and milk, and blend until combined.
In a separate bowl, beat egg whites with a pinch of salt on high until stiff. Transfer egg whites into cake mixture and gently stir by hand until combined.
Prep bunt cake by greasing it with butter. Transfer about ⅔ of the cake mixture into it. Add cocoa and rum to the remaining ⅓ of the cake mixture and stir until combined. Add to the pan and gently stir to create swirls.
Bake for about 50-60 minutes. Take out and cool before sprinkling with powdered sugar.

What do you mean in step 4 by “Alternately add egg yolks, flour and milk…” You do you have to add a bit of each in turn? Thank you.

Can you also omit the alcohol or replace it with something else?
Omit together.
Is it plain or self raising flour that’s used?
What size bundt pan please?
Was great.!! Only thing I would suggest is to PLEASE change the wording tbs for milk and cocoa to Tbps. I accidentally measured for tsp.

First time for making a Babka. Very tasty but came out kind of dry. Did I bake it too long or is it suppose to taste like that.
