Polish Herring and Beet Salad
This herring and beet salad is accompanied by a rainbow of flavors and textures. Sweet raisins, earthy beets, smooth potatoes, crunchy pickles and walnuts, salty fish. The combination is absolutely surprising and delicious. This salad makes a nice side dish for any party.

Herring and Beet Salad
Ingredients
- 3 filets of salt cured herring (a la Matias)*
- 1 large beet (2 cups cubed)
- 3 medium potatoes (2 cups cubed)
- 1 apple
- 4 medium pickles
- 1/3 cup of raisins (cranberries or diced dried plums will also do)
- 1/3 cup of walnuts
- 2 heaping tbs of mayo
- Ground pepper and salt to taste
Instructions
Place herring filets in a bowl with cold water and let soak for about 1 hour. This will remove the strong salty flavor.
Wash your beet and boil unpeeled in salted water until soft. Do the same with the potatoes. Once cooked, cool then peel and dice into an even dice. Place in a large mixing bowl.
Dice apple, pickles, onions and walnuts and add to beets and potatoes. Add raisins and mayo and mix gently.
Remove herring from water and pat dry. Dice into an even dice and add to the salad. Sprinkle with ground pepper and salt to taste. Mix gently to combine all ingredients.
Refrigerate until serving.
Notes
* herring a la Matias filets are sold packaged in oil, or in salt brine. This recipe requires salt cured herring filets, not vinegar or wine sauce herring.
