How many times you have a pretty good idea what protein and starch to make for dinner, but the thought of coming up with a salad has you staring into the distance. I totally understand! Here is a trick, go down the list of ingredients you have to decide, carrot = carrot salad, cooked beets = beet salad, leek = leek salad, cucumber = cucumber salad. Problem is, I may not always have any of the above, but tomatoes… I always have tomatoes = tomato and onion salad. Quick and easy summer salad, goes well with pretty much anything, meat, pierogi, sandwiches, is cool and refreshing and puts a small dent in the tomato stash that you have after this summer harvest. Done and done!

Polish Tomato and Onion Salad {Pomidory z Cebulą}
Ingredients
- 5-6 medium tomatoes
- 1/2 medium onion (or more)
- 1/4 cup of sour cream (plain or Greek yoghurt works well also)
- Pinch of salt and pepper
Instructions
Wash and dry tomatoes. Cut into good-sized chunks. Thinly slice the onion. Add sour cream, salt, and pep- per. Mix.
If too dry, add a bit more sour cream, but let sit for a few minutes; it will become more watery.
Chill before serving.
Can you tell that the tomatoes taste sweeter and more potent in the summer. I eat a lot more of them when they’re in season. What’s your favorite tomato salad? Hope you give this one a try.

Definitely will try this whenever my tomato plants come into bloom with fruit. I love the cucumber and onion salad too.
I grow lots of different varieties of tomato. I have an allotment and greenhouse. The tomatoes sold in supermarkets are watery and tasteless. One of my favourite tomatoes is ‘ Roma ‘. One that the Italians use for canning . Less seeds and more flesh and elongated so when it comes to slicing you get more slices and less ends. Xx
