Polish Sausage Casserole

Polish sausage casserole can be prepared with any favorite sausage. I’m using fresh Polish sausage {biała kiełbasa} – my recipe here but smoked pork sausage {kiełbasa wędzona} – my recipe here, would also work perfectly here. This simple dish makes a perfect quick dinner and will wow you and your guest with flavor. I like to serve it over re-heated mashed potatoes, I will show you how to do this in the video below. 

“Biała kiełbasa” – byah-wah kyew-bah-sah is always prepared as part of Polish Easter dinner, but we also like to enjoy it grilled or baked, as presented in this recipe. I’m baking it with spicy mustard, lots of onions , apples and raisins. I think all of these flavors work well together and create an awesome, well-rounded meal. 

 

Polish Sausage Casserole

  • Yields: 3–6 servings
  • Prep Time: 10 min
  • Cook Time: 45 min

Ingredients

  • 3 c of sliced onions
  • 2 apples
  • 8 oz / 250 ml of beer
  • 2 tsp of spicy dijon mustard
  • 1/4 c old-style mustard (French mustard)
  • 1/4 c of raisins
  • Pinch of salt
  • 1/4 tsp of ground pepper
  • 6 sausage links (fresh or smoked Polish sausage)
  • Parsley, for garnish

Instructions

  1. Preheat oven to 360℉ / 180℃.

  2. Slice onions in half and then vertically, from stem to root. Cut apples in half, core and slice. Set both aside.

  3. In a medium bowl, mix beer with both mustards, add raisins, salt and pepper.

  4. Place onions and apples in a baking dish, pour beer mixture over the top and mix. Place sausage links on top and puncture sausage casings before baking.

  5. Bake for 20 minutes, then mix onions/apples and flip sausages. Bake for another 25 minutes.

  6. Sprinkle with chopped parsley and serve over potatoes or favorite dumplings.
