My dad made polish sausage similar to yours but no bacon in it his little secret was adding a little brown sugar rubbed the garlic cloves in salt .hand grinder he even made a little case for all the attachments as he was a wood pattern maker by trade.im 82years old now still have those great memories of him making polish sausage.yes I still have that grinder and the case he made treasure it.i even married a polish fog.love polish food
