Polish Lemon Coffee Cake {Ciasto Cytrynowe}
If you’ve read any of my previous dessert recipe posts, you will know that I am not a great baker. I can do simple jabłecznik, or babka or even simple crumble cake, but start talking to me about getting into layered cakes and you’ll see me with my eyes wide open, staring into space. I thought bezy was a challenge. I have a lot to learn.
Truth is, fancy cakes were never a thing in my home (by fancy, I mean, tall layered cakes with frosting or icing, finished with a variety of decorations). Babcia made cheese cakes, poppy-seed rolls and babki [pl. from babka] every holiday and often on Sundays, so those I’m comfortable with and often go for simple. Today, a simple lemon coffee cake. One that a busy mom or dad can throw together and enjoy with an unexpected guest, made with ingredients that you most likely already have at home. Lemony fresh, tangy and moist and sweet, perfect for a morning or afternoon coffee. You can even dress it up with fresh fruit, or ice cream on a hot summer day.
Polish Lemon Coffee Cake {Ciasto Cytrynowe}
Ingredients
- 9 oz / 250 g of butter at room temperature
- ¾ c / 175 g of granulated sugar
- 3 eggs at room temperature
- 1 ½ c / 190 g flour
- 1 tsp of baking powder
- Pinch of salt
- Zest of 1 lemon
- Juice of ½ lemon
- ADDITIONALLY:
- ½ cup of water
- ¼ cup of honey
- Juice of 2 lemons
Instructions
Preheat oven to 350°F / 180°C.
Beat butter with sugar until fluffy, add eggs one by one.
Mix flour with baking powder and salt and add to sugar/egg mixture.
Next, add lemon zest and lemon juice.
Transfer mixture into greased 9 in round pan. Bake for 40-50 min. Watch it, so it doesn't burn.
In the mean time, combine water, honey and lemon juice and heat on low until warm and combined.
When cake is ready, take out of the pan onto a plate. With a wooded skewer poke holes in the cake, through to the bottom. Spoon water/honey/lemon juice mixture onto the cake to soak it.
Sprinkle with powdered sugar if desired.
This simple lemon cake would make a great base for a layered cake. Maybe I’ll play with that sometime. Let me know if you do.

What do you do with the 250g of butter? Can’t see it mentioned in the directions. When should it be added?

This turned out beautifully! I made it for our anniversary dinner this past weekend.
Perfect size and there was none left over, when I made it. That tells you that it was very good.
